Specifically, it is an indigestible sugar that is to all intents and purposes a soluble fibre.<\/p><p>This substance is found in many fruits and vegetables, such as:<\/p><ul><li>lemons and citrus peel in general<\/li><li>apples<\/li><li>apricots<\/li><li>cherries<\/li><li>prunes<\/li><li>berries<\/li><li>carrots<\/li><\/ul><p>Due to its excellent <strong>gelling<\/strong> and <strong>texturising capabilities<\/strong>, pectin is widely used in the fruit processing and confectionery industries, as well as in the <strong>dairy industry.<\/strong><\/p><p>For example, this molecule is often used during the preparation of yoghurt, gummy sweets, dehydrated fruit snacks, jams, fruit juices.<\/p><p>In addition, pectin is also used as a <strong>thickening agent<\/strong> in specific <strong>pharmaceutical applications<\/strong>.<\/p><p>The main property of this molecule is that it <strong>binds with water<\/strong> and <strong>other sugars<\/strong> to form dense, sticky substances of a gelatinous consistency, but it is not the only one.<\/p><p>In fact, it also has another important property: it has <strong>very low affinity for heavy metals<\/strong>.
